Pazo de Señorans, a practical, modern winery.

All the grapes are picked by hand and placed in small harvesting crates. The sorting is done carefully in the vineyard itself, so that any raw material which doesn’t meet the highest standards of ripeness and health is discarded on the spot.

One this phase is completed, the grapes are taken immediately to the winery where the vinification process is begun as quickly as possible.

The necessary material for the different wine-making processes is carefully set out in separate areas of the vat cellar.

High precision, technologically advanced equipment

is used for each stage of the vinification, making the cellar work easy and the layout functional.

All of the wine-making equipment is in stainless steel: the small-sized vats, pneumatic presses, a non-axial feed de-stemmer, mono pumps and piston pumps, the temperature control system, amicrobic diatomeas filters and so on.

Everything is at hand to achieve our aim of the highest quality with minimum handling.
