The Pazo señoráns Albariño is a harmonious blend produced at the winery from different plots. In contrast, the Selección de añada (Vintage Selection) is an Albariño made up of a selection of grapes with higher alcohol levels and greater acidity. These grapes normally come from a plot located in the higher part of the estate with sandy subsoil, which enables the fruit to reach excellent ripeness levels.

The first Selección de añada was made in the 1995 vintage and was bottled after eleven months’ ageing in vat. For the 1996 vintage, this ageing period was extended to twenty seven months. The secret of the success of this white wine is firstly to respect its need to be bottled late after a period of time in stainless steel vats preserved by inert gas. Grape selection is of course of great importance too, and when the vintage is excellent the wine can develop slowly and subtly. Finally, the wine needs time to rest in the peaceful atmosphere of the ageing cellar. The combination of these things, even with such a long delay before bottling, produces superb quality wines.

There is a great difference in tasting characteristics between the normal Albariño Pazo señoráns and the Selección de añada. The analysis results also show that the latter has a much higher acidity which helps the wine to develop with elegance over a period of several years.

In 2008, the total production was around four hundred and twenty thousand bottles. The export market is increasing steadily and its success on the domestic market has earned it the reputation of being one of the highest quality wines in the Rías Baixas appellation.
